Where did the holy 9 bar of pressure for espresso come from?

From my experience it seems that everyone is happy with changing everything such as extraction times, dose ins and outs, temperature, flow rates etc but the line pressure doesn't seem to get mentioned. The 9 bars of pressure has been the number since pumps could get a consistent pressure in machines but how do we know that's the ideal pressure for different coffees and even different machines?

Pressure doesn't get mentioned because, for the most part, pressure isn't worth mentioning.

...It's not that 9 bar is or is not or could be "ideal" - instead, getting "ideal" pressure makes next to no difference so fussing about it is pointless.

Except for when it really matters, so I'll cover outliers first. Something super high pressure like 12 or 14 ... tastes pretty brutal. Brew a super excellent shot and get it to all work out really well and it's still pretty harsh and astringent and not particularly nice to drink - higher pressures overextract faster. Brew a coffee below ~7 or so, and you don't form the colloids needed for espresso or crema - you get moka pot instead.

But within that range - "pressure profiling" for espresso machines was The Fucking Rage like two to four years ago. Everyone got their dope super-high-end machine that totally lets them profile pressure down to the tenth or the hundredth of a bar and started trying to absolutely optimise their espresso and ... nothing happened.

Turns out as long as your ballpark is correct, anything else you might do will have a bigger impact than solely adjusting pressure. The taste difference of finding that quarter bar adjustment that's absolutely brilliant for this particular coffee ... negligible. Not even big enough gains to tip a bubble competitor into a winner at the competitive level.

So we end up orbiting back to 9 bar, much more confidently able to say "approximately 9 bar" than before ... but the big thing we learned was that it's not worth trying to learn much more. 9 bar is a good compromise where you don't have enough pressure to make channeling a huge threat on every single non-ideal puck, while still being high-enough pressure to get a reasonable speed of extraction and not risk much cavitation instead. On any given espresso, adjusting by a few points of a bar might 'optimize' your shot further ... but not by enough to make the time and effort investment worthwhile.

Am I the only one confused by the ending? Where Marty doesn't turn in Ruth and instead they hug it out? Is she playing him? If she is then why go so far as to kill her uncles? Did I miss something?

Top Comment: Why would he turn her in, when she just saved his life? He would not benefit at all from turning her in, it would probably turn out worse actually as Ruth could out his entire operation. It would make 0 sense for him to do that. Ruth did it because she knew what her uncles were going to do, and she knew that Marty was actually a decent human (to her at least).

Ryzen or Coffee Lake?

Hello! I'm currently deciding whether to buy an R5 1600 or 8600k. The main purpose of the PC will be probably gaming in 1080p/60fps (not pissed about turning some settings down), 3D modeling and light video editing. My main concern about Coffee Lake is the platform lifespan. I'm afraid of not being able to upgrade to a better CPU after some time and with AMD's promises about platform support up to 2020, I'm leaning to AMD side. I'm keeping some old hardware like the GPU (just for a while, don't worry) and a 500W Seasonic power supply.

The build:

*AMD Ryzen 5 1600

*ASUS Strix B350-F

*G.Skill Ripjaws V 2x8GB 3200Mhz CL16

*ASUS GTX 750Ti OC

*Seasonic 500W (non-modular)

*Fractal Design Meshify C

With a 750Ti your CPU does not matter whatsoever in gaming. The GPU will be the limiting factor. So I’d go for Ryzen for double the threads, a cheaper price, an included cooler, and better platform longevity.

You would have to step up to a 144Hz gaming monitor and a high-end video card for Ryzen to limit you in gaming. For your needs, shooting for 60 FPS with a 1050Ti or at least an RX 560 would make the most sense. (You’d have to turn down the graphics with both, but much less so with the 1050Ti.)
